To say that keeping track of the changes in the Chicago food truck scene is a challenge these days would be an understatement.

New trucks... Trucks coming out of hibernation... Truck owners opening shops... Trucks in question whether they'll return to hit the streets... And saddest of all, trucks that threw in the towel. All and all, this is shaping up to be one tasty summer! And a real possibility I can hit my Next 50 before it's all said and done.

Just last night, I caught wind of this shiny new food truck while doing a little overdue upkeep on my twitter list.

Except it didn't click at the time that not only was this a new food truck to add to my hit list, but these guys were hitting the streets. Like, now.

Lucky for me, they picked a spot relatively close to my office for their official debut: Chicago and Franklin.

Only wrinkle was that this is a breakfast-only truck and I have a 2-hour commute into the city. Champ that I am, I woke even earlier than normal and left the house before I normally wake up (um, 5:45 am in case you were wondering).

That's because I'll always make an extra effort to score a new truck for my Noob mission. And I especially like to hit a truck on its first official day out. This is at least my fourth, maybe fifth one. Nice!

Only two menu items to choose from this morning, so I went with the heartier option: The Eastman (why I was tweeting that I ate The Fairfax, I have no idea... I'm going with lack of sleep). Ham and egg with swiss cheese, sweet chili and sliced cucumbers on an English muffin.

Let me tell you: that sandwich kicked some serious ass. And that had to be the thinnest, tastiest English muffin I've ever had. Totally worth the nearly 4-hour wait for me from the time I got up until the time I ate.

I did notice a couple other sandwiches covered up with the promise of "coming soon." Well, you can bet I'll be coming back!
