Carbon's Kitchen

When you look at the big food truck cities, they all tend to have some staple trucks. And a waffle truck is one of them.

News flash folks: Carbon's Kitchen is that truck for sweet home Chicago. And holy hell, this is one monster of a truck!

I'll admit, I was a bit confused when I first caught wind of this truck at last month's NRA show. As I did my research, I noticed it is an Indiana company. Really? Hmmm.

Was it just visiting for a while? Was it passing through? I'd have to keep my eye on the twitter feed.

And then the announcement came about the Chicago license getting approved. Interesting. But still the twitter profile lists Indiana. Also interesting.

Well, I got my answer today at the truck. Folks, this is most definitely a Chicago truck, here to stay. Seems they want to expand their reach beyond South Bend. Very clever.

Naturally these guys roll both breakfast and lunch. I opted for the lunch run at 30 E. Lake and was excited to entice a new Playa for the mission. Only it turns out there was a delivery truck spamming the truck stand. Way to fail CPD. Thankfully, they called an audible and landed at 600 W. Chicago, still within reach.

So Eva, Amelia and I set out for some grub. I went for the buffalo chicken and waffles with bleu cheese and avocado. And waffle fries? Yes please!

I'll admit, the sandwich was smaller than I was expecting, but then again, so was the price. Fear not, this is definitely a hearty sandwich. And the bleu cheese and avocado was a nice touch. Surprise number two: this isn't fried chicken, but more of a pulled chicken salad. Honestly, I think that works out better because fried chicken can wreak havoc on a waffle and the roof of your mouth when you're attacking it in sandwich form.

I'll leave you with a word of advice: if you're taking it to go, you're doing it wrong. You'll want to eat this on the spot unless your destination is really close. By the time we got back to the office, 20 minutes had passed and the waffles had lost their crunch. That's not the truck's fault. I'll chalk that up to operator error.

Now I need to redeem myself and do it all over again. Yay me!
