Chicago Pork Chop

I had already made it up in my mind that I would skip tonight's Tap This at Fischman Liquors. I just finished working my company's conference, which completely wipes me out. I'm generally in a vegetative state for a couple days afterward.

But I got called out on Facebook because Pork Chop and Toasty Cheese were making their debuts at Tap This. Thanks BDub. No pressure.

I've been to Toasty Cheese a number of times and I'm already a huge fan. But Pork Chop? I only learned about this truck a couple weeks ago, and here I had an opportunity to score them.

Hell, it's so new it didn't even make my hit list!

If you've been following along, you know that I've cursed myself for passing on a truck only to find them nigh impossible to land for months on end. That, and my arm is pretty flexible when someone tries twisting it (just sayin').

Aw hell, I'm in.

And then Mother Nature decides to flood the city this morning and most trucks called off. Fantastic. So I can't lie: I was doing a little happy dance in my head when I saw the truck already parked as I walked up to the bar. Plus I get super stoked whenever I can land a truck on their first day on the road. It takes that Noob mission to a whole other level. Tonight marks the third one.

After a drink at the bar, I made my way to the truck to see what was on board: pulled pork, pulled chicken or brisket sliders. I'm a sucker for a good brisket so that was my choice.

No matter how often I try, I'm usually disappointed when I order brisket. But this was super tender and had a great sauce on it. Total win!

I'll have my eye on this truck for when it has its full game face on.
